A delicious buttery slice that is filled with jam and topped with streusel. The great thing about this recipe is that any sort of jam can be used. I usually go for anything that is opened. When I made this yesterday, I used apricot jam – yum!.
225g unsalted butter
150g caster sugar
1 teaspoon vanilla extract
290g plain flour
pinch of salt
340g jam / conserves, your choice of flavor
Preheat the oven to 180ºC. Line a slice tin (18cm x 28cm) with baking paper.
In a food processor, add flour, sugar and salt, pulse until the ingredients are just mixed through. Then add the butter and vanilla. Mix until the dough has started to come together into firm breadcrumbs texture. Remove about half of this mixture in a bowl, set aside in the fridge. This will be the streusel topping.
Continue mixing until the dough until it starts to form, almost until before it clumps together into a ball. Remove and press into the prepared slice tin.
Spread the jam evenly. Then, crumble the streusel topping evenly over the jam.
Bake for 45 minutes or until the top is a light golden brown. Allow to cool before cutting into fingers. Store in an airtight container.
