A delicious combination of almonds and lemon! The slice has a dense but moist texture and the flaked almonds gives a nice crunch.
180g ground almonds
125g plain flour
160g caster sugar
1/2 teaspoon baking powder
160g unsalted butter
2 lemon, zest grated and juiced
4 tablespoons milk
40g flaked almonds
Preheat the oven to 180C. Line a slice tin (18cm x 28cm) with baking paper.
Add ground almonds, flour, sugar, baking powder and butter in a food processor. Process until the mixture resembles a crumbly breadcrumb like texture.
Take out 1/3 of the crumbly mixture into the prepared slice tin. Press the mixture until the base of the tin is covered.
In a mixing bowl, lightly whisk the eggs, lemon zest and juice together. Add the milk and stir until it has been incorporated. Than add the remaining crumbly mixture and mix until well combined.
Spread the topping over the prepared base. Sprinkle the top with flaked almonds.
Bake for 35 to 40 minutes, or until it is golden brown and when tested with a skewer that comes out clean. Allow the slice to cool completely in the tin before removing to cut into fingers. Dust with icing sugar.
