Overnight Bran and Date Muffins

These are a lovely muffins filled with dates.  They are not overly sweet.  The muffins can be made and cooked on the same day, but are not as nice as if the mixture is left to stand overnight.

1 1/4 cups plain flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup sugar
1 3/4 cups unprocessed bran
250g dates, finely or roughly chopped
1/2 cup sunflower oil
1 1/2 cups buttermilk
1 egg

In a mixing bowl, add flour, baking soda, cinnamon, sugar, bran and dates.

In a jug, add oil, buttermilk and egg.  Mix until well combined.  Add the liquid to the dry mixture and mix well.  Cover and refrigerate overnight.

The next day, grease either a 6-hole or 12-hole muffin tray (depends how many muffins you want to make).  Preheat the oven to 200ºC.

Fill each muffin hole with the mixture and bake for 20 to 25 minutes or until tested using a fine skewer which comes out clean.

Serve these muffins hot / warm with butter.  Enjoy!
