This is a quick, easy and a very delicious slice!! This slice has all the flavours of S’mores – a beloved American campfire treat which involves toasted marshmallows with a melted piece of chocolate sandwiched between two graham crackers. The best substitute for graham crackers in Australia (if you can’t find them) is either digestive biscuits from McVities or Granita biscuits from Arnotts.
225g unsalted butter, softened at room temperature
1 1/2 cups (255g) brown sugar
1 teaspoon vanilla extract
250g packet Granita biscuits or Graham crackers, crushed
2 cups (300g) plain flour
1/2 teaspoon baking powder
pinch of salt
2 cups dark chocolate chunks (or two packets)
2 heaped cups (150 to 200g) mini marshmallows
Preheat the oven to 180ºC. Line a lamington tin (20cm x 30cm) with baking paper.
In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, beat until well combined.
Add the flour, crushed biscuits, baking powder, salt and vanilla extract. Stir until the mixture is just combined.
Place 3/4 of the mixture into the prepared tin. Dust your hand with flour, so that you can spread the mixture evenly in the tin.
Scatter the base with chocolate chunks, then the marshmallows. Crumble remaining dough mixture on top. It shouldn’t cover the entire top, as you want the chocolate and marshmallows to show through.
Bake for about 30 to 35 minutes, or until golden brown. Set the tin on a wire rack to cool completely. Remove and cut into squares or fingers.
