These are crunchy biscuits that are soft and chewy inside – the way I like my biscuits to be! The combination of oats, nuts, dates and white chocolate is delicious! This recipe makes a small batch of biscuits – so you may want to double it.
110g unsalted butter, softened at room temperature
1 teaspoon vanilla extract
115g brown sugar
100g plain flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
100g rolled oats
40g pecan nuts or almonds, chopped
80g dates, chopped (into fours)
100g (or 1/2 packet) white chocolate chips
In a mixing bowl, beat the butter, vanilla and sugars until pale and soft. Add the egg and mix well.
Add the flour, salt, baking powder and baking soda into a bowl, the add the oats, pecan nuts or almonds, choc chips and dates. Mix well but do not over mix.
Chill the mixture in the fridge for 10 to 20 minutes, which makes shaping the biscuits easier.
Preheat oven to 180ºC. Line a baking tray with paper paper.
Place a tablespoonful of mixture onto the baking tray, making sure they are spread apart to allow for spreading. Bake for about 10 minutes. Cool biscuits for five minutes before removing them onto to a cooling rack to cool completely.
