A very simple slice to make! It is quite moorish with the texture being firm, almost biscuit-like with the pieces of mixed dried fruit and crunch from the pecans. I didn’t iced this slice, but rather dust it with icing sugar. It really depends on your personal taste.
125g unsalted butter
1 cup self-raising flour
2 tablespoons cocoa powder
1/2 cup castor sugar
1 cup desiccated coconut
3/4 cup mixed dried fruit
1/4 cup pecan nuts, chopped
1 1/2 cups icing sugar
1/4 cup cocoa powder
2 teaspoons melted butter
2 tablespoons milk, approximately
2 tablespoons desiccated coconut
Preheat the oven to 180ºC. Line a slice tin (18cm x 28cm) with baking paper.
Melt butter in a saucepan. Then, add flour, cocoa, sugar, coconut, fruit and pecans. Mix until all ingredients are combined well.
Press the mixture into the prepared tin, bake for about 20 minutes. Allow the slice to cool in the tin.
If using the icing (mix all ingredients together to make a firm paste), spread the chocolate icing onto the hot slice. Sprinkle with coconut. Or, dust with sifted icing sugar.
Once the slice has cooled, removed from tin and slice into fingers.
