Toscanner Slice

This is a buttery almondy delight of a slice! It has a firm base, topped with a frangipani type of filling covered by a buttery and honey caramel-like crunchy topping.  Despite the recipe involving a few steps, this slice is worth making.

1 1/2 cups plain flour
1/2 cup icing sugar
1 teaspoon vanilla extract
125g unsalted butter
1 egg
185g unsalted butter, softened at room temperature
3/4 cup caster sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup plain flour
1 cup (100g) almond meal
90g unsalted butter, chopped
1/2 cup caster sugar
1/3 cup (3 tablespoons) honey
125g flaked almonds

Preheat oven to 180°C. Line a 3cm deep, 24cm x 29.5cm lamington tin with baking paper.

Combine flour, icing sugar and butter in a food processor.  Process until mixture resembles fine breadcrumbs.  Add vanilla extract and egg.  Process until dough comes together.  Press into prepared tin.  You may need to dust your fingers with flour to help you to spread the dough, as it can be a little bit sticky.

Make the filling by creaming the butter and sugar until light and fluffy in a mixing bowl.  Add eggs, one at a time.  Then add vanilla extract.  Beat well to combine. Using a large metal spoon, fold through flour and almond meal.  Spread mixture over base.  Bake for 30 minutes, or until golden and firm to the touch.

Make the topping by combining the butter, sugar and honey in a small saucepan over medium heat.  Slowly bring to the boil.  Reduce heat to low.  Simmer for 2 minutes, then stir through flaked almonds.

Pour the topping mixture over the warm slice.  Bake for further 10 minutes.  Just make sure that you don’t go over the baking time, otherwise the topping can brown very easily.

Allow the slice to cool completely in the tin before removing it to cut into pieces.

Serve and enjoy!

      I’ve had this recipe for so long that I finally got around to making this. What a surprise it was that it tasted so delicious! The crunchy almond topping with a hint of honey is the best part of this slice. I hope you enjoy making this slice.
