Lemon Cream Oatmeal Slice

This is a crunchy and at the same time a very moreish slice.  The use of oats gives the crunch, while the simple subtle lemon cream used as a filling gives the fudgy texture to the overall slice.  This recipe is certainly a keeper!

125g unsalted butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
1 1/3 cups plain flour
pinch of salt
1 teaspoon baking powder
1 cup rolled oats
395g can sweetened condensed milk
3 teaspoons natural lemon extract

Preheat the oven to 180ºC.  Line a square 20 x 20cm baking tin with baking paper.

In a large mixing bowl, cream together the butter and brown sugar.  Add vanilla extract, flour, salt, baking powder and oats.  Combine all ingredients until the mixture has come together.

Press half of the oat mixture into the prepared tin.

In a small mixing bowl, mix together sweetened condensed milk and lemon extract.

Spread this mixture evenly on top of the pressed oat mixture in the tin. Top with remaining oat mixture.

Bake for 25 to 30 minutes or until the top is golden brown.  Allow the slice to cool in the tin, before removing it to cut into fingers.
