This is a very delicious crunchy, yet slightly chewy in the middle bars filled with oats, dried fruits and a hint of chocolate chips. It is ridiculously easy to make! What is interesting about this recipe is that the dry ingredients are combined together using a can of sweetened condensed milk… It actually works. I came across this recipe from Nigella Lawson’s website. She calls these ‘Breakfast Bars’ because these bars are literally just cereal and milk! I have tweaked the original recipe a little bit. You can replace some of the berries with something else, like pecan nuts or other variety of dried fruits. After you try these bars, you won’t want to buy those muesli bars from the supermarkets.
2 1/2 cups (250g) rolled oats
1 cup (75g) shredded coconut
1 cup (100g) dried cranberries
3/4 cup (100g) mixed seeds (pumpkin and sunflower seeds)
1/2 cup (50g) dried Goji berries
1/2 cup (70g) dried blueberries
1/2 cup or 1/2 packet of milk or white choc bits
395g can sweetened condensed milk
Preheat the oven at 170ºC . Line either a 18cm x 28cm slice tin or 20cm x 30cm lamington tin with baking paper.
Pour sweetened condensed milk into a small bowl. Warm the condensed milk in the microwave for 30 seconds.
In a large mixing bowl, add oats, coconut, cranberries, mixed seeds, goji berries, blueberries and choc bits. Mix well until the ingredients are well combined.
Pour warmed condensed milk into the dry ingredients. Mix well using a large metal spoon.
Spread the muesli mixture into the prepared tin and press down with the spatula to even the surface. Bake for 30 to 40 minutes, until lightly golden brown.
Cut the warm slice into bars or squares, then leave the slice to cool completely. Then, remove the slice from the tin and cut through the pre-cut lines. Store in an airtight container.
