This is a very moreish slice – it has a buttery chewy oat base topped with a fudgy chocolate with some walnuts. Better still, this slice is easy and cheap to make! And it will make a lot too – perfect if you need to bring something for morning tea at work or you are sharing with other people. Make the slices into smaller squares and it will go a long way, without having to spend a fortune in buying the ingredients.
2 cups (440g) brown sugar
250g unsalted butter, melted
2 eggs, lightly beaten
2 teaspoon vanilla extract
2 cups (300g) self-raising flour
3 cups (270g) rolled oats
30g unsalted butter
300g dark cooking chocolate, chopped
395g can sweetened condensed milk
1 cup (110g) walnuts, chopped
2 teaspoons vanilla extract
Preheat the oven to 180ºC. Line two slice tins (18cm x 28cm) with baking paper.
Mix the brown sugar, melted butter, eggs and vanilla together in a large bowl, then stir in the flour and oats. Divide the mixture between the two slice tins and press down to spread out and flatten.
To make the topping, place the butter, chocolate and condensed milk in a small saucepan and gently heat, stirring until melted and smooth. Add the vanilla and walnuts and stir through and divide mixture equally over the base of the two slice tins.
Bake for 30 minutes. Remove from oven and allow slice to cool completely in the tin before removing them to cut into fingers.
