This slice contains a buttery oat mixture that forms the base and crumble to cover a fudgy chocolate filling that has a brownie-like texture. If you would like to have a bit more texture, stir through a packet of white chocolate chips after the final step in making the chocolate filling. This slice is very easy to whip up. And it is also very moreish!
3/4 cup self-raising flour
1 cup rolled oats
1 cup brown sugar
125g unsalted butter, melted
60g unsalted butter
250g dark cooking chocolate
1/2 cup brown sugar
2 teaspoons vanilla extract
1/2 cup plain flour
Preheat the oven to 180ºC. Line a slice tin (18cm x 28cm) with baking paper.
Combine flour, oats and brown sugar in a mixing bowl. Pour melted butter and stir to form a crumbly mixture. Place about 2/3 of the mixture into the prepared baking tin.
To make the filling, combine butter and chocolate in a medium saucepan. Under low heat, stir until they have melted. Using a whisk, whisk eggs into the melted chocolate mixture, then whisk in brown sugar, vanilla extract and flour until the mixture is smooth and combined.
Pour the filling over the base. Sprinkle or scatter the remaining oat mixture on top of the filling. The remaining oat mixture will not cover the entire filling.
Bake for 30 to 35 minutes, or until the filling is set and firm to touch. Allow the slice to cool completely in the tin before removing it to cut into fingers.
