Spiced Date Slice

This is a lovely slice!  The dates is the main feature here – a lovely gooey mixture with a hint of spice.

100g unsalted butter
1/2 cup caster sugar
1 egg
1 cup self-raising flour
1/2 cup plain flour
1 teaspoon mixed spice
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 1/2 cups pitted dates, roughly chopped
3/4 cup brewed black tea
1/2 cup caster sugar
1 teaspoon ground cinnamon

To make the date filling, place ingredients in a saucepan. Stir over a medium heat until sugar dissolves. Bring to boil, then reduce heat to simmer for about 5 minutes.  Stir occasionally.  Remove from heat and allow the mixture to cool slightly.

To make the base, place the dry ingredients into a food processor.  Process until the ingredients are blended well.  Then add the egg and vanilla extract, process until the mixture comes together.

Turn out onto a lightly floured bench. Shape it into a round shape, then cover and refrigerate for 30 minutes.

Preheat the oven to 180ºC.  Line a slice tin (18cm x 28cm) with baking paper.

Roll out one half of dough to fit your prepared slice tin.  Using your fingers to press and smooth the pastry to fill in all the edges.  Top with date filling mixture.

Roll out remaining dough. Place on top of date filling mixture. Use fingers to press dough evenly over date mixture.  Brush the top with some milk and sprinkle with either raw sugar or demera sugar or coffee crystal sugar.

Bake for 30 minutes.  Allow the slice to cool in the tin before removing it to cut into fingers.  You may like to dust lightly with icing sugar.
