Christmas Chocolate Cherry Coconut Slice

A delicious and moist slice that is full of flavour from cherries and coconut. The use of glace cherries makes this a perfect treat for the holidays or Christmas.  What is best about this slice, is that there is no ‘baking’ required!  The recipe is set and chilled in the fridge.

Base:
250g packet sweet biscuits, crushed
2 tablespoons cocoa powder
125g unsalted butter, melted
1 teaspoon vanilla extract
Filling:
200g desiccated coconut
395g can sweetened condensed milk
150g glace cherries, roughly chopped
Topping:
145g dark chocolate melts
2 teaspoons vegetable oil

Line a slice tin (18cm x 28cm) with baking paper.

Mix together the biscuits crumbs, cocoa powder, melted butter and vanilla extract.  Press the mixture evenly into the prepared slice tin and refrigerate until the biscuit base is firm.

Then, combine cherries, condensed milk and coconut.  Spread this mixture evenly over biscuit layer, refrigerate until firm.

Combine melted dark chocolate melts and vegetable oil. Pour over the slice. Refrigerate until just set.  Remove slice from the tin and cut into squares or fingers using a sharp knife.  You may find heating the knife blade may assist in cutting through the chocolate. Then place slice back into the fridge to keep chilled.
